Dirty Potato Soup with Ground Beef

Ingredients
- ½ lb 80/20 Angus ground beef
- BeSureTo Seasoning Blend: a shake for the beef plus ½ teaspoon for the soup
- A shake of onion powder
- A little olive oil
- ¼ green bell pepper, chopped
- ¼ red bell pepper, chopped
- ¼ cup chopped celery
- ¼ small onion, chopped
- 1 garlic clove, chopped or about 1 teaspoon
- ½ teaspoon pepper, plus cracked black pepper to taste
- 1 tablespoon butter
- 1 tablespoon all-purpose flour
- 1 cup beef broth
- ½ cup whole milk
- 2 potatoes, diced
- ½ teaspoon Better Than Bouillon beef base
- 1 teaspoon Worcestershire sauce
- A pinch of sea salt or kosher salt
- ¼ cup heavy cream
- A pinch or two of parsley flakes
- ⅓ cup shredded sharp cheddar cheese
- Optional: 1 teaspoon cornstarch mixed with a little cream if the soup needs thickening
Instructions
- Brown the ground beef with a shake of BeSureTo Seasoning Blend and onion powder. Drain and set the cooked beef aside.
- In the same pot, add a little olive oil. Cook the green pepper, garlic, celery, red pepper and onion until they begin to soften. Add the pepper.
- Stir in the butter. Once the butter melts, add the flour and cook for 1–2 minutes while stirring. Slowly add the beef broth, followed by the milk, whisking until smooth.
- Stir in ½ teaspoon BeSureTo Seasoning Blend. Add the diced potatoes and beef base. Simmer until the potatoes are tender, about 15–20 minutes.
- Add Worcestershire sauce, cracked black pepper and a pinch of salt. Return the cooked ground beef to the pot.
- Stir in the heavy cream and parsley. Turn the heat to low, add the shredded sharp cheddar and stir until melted. If the soup is thinner than you like, stir in the optional cornstarch mixture and heat until thickened.
