White Coconut Vanilla Cake Sliced on Plate

🎂 Why This Cake Works

This cake brings together the simple magic of vanilla and the cozy texture of coconut. It’s buttery, fluffy, and moist with just enough sweetness to make it crave-worthy—but not too much to overpower the coconut. The texture is tender and nostalgic, like a classic bakery slice… only better because it’s homemade!

Top it with cream cheese or vanilla frosting—or enjoy plain with coffee. Perfect for birthdays, potlucks, or Sunday afternoons.

🧾 Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup whole milk

📋 Instructions

  • Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
  • Whisk together flour, baking powder, and salt in a medium bowl. Set aside.
  • In a mixing bowl, beat butter and sugar with a hand mixer until fluffy (2–3 min).
  • Beat in eggs one at a time, then stir in vanilla.
  • Add dry ingredients in two additions, alternating with milk. Mix until just combined.
  • Pour into pan and smooth top. Bake 30–35 min or until a toothpick comes out clean.
  • Cool in pan for 10 min, then transfer to a wire rack to cool completely.
  • Top with frosting if desired and enjoy!

✨ Optional Frosting

Small-Batch Cream Cheese Frosting:

  • 2 cups confectioners' sugar
  • 1 tsp vanilla extract
  • 1–2 tbsp milk (adjust for thickness)

Beat cream cheese and sugar, then add vanilla and milk. Mix until smooth and fluffy. Spread on cooled cake.
