Wet Mix
- 5 tbsp unsalted butter (softened)
- ½ cup light brown sugar
- ⅓ cup white sugar
- 1 large egg
- 1 tsp vanilla extract

- Preheat oven to 350°F / 175°C. Line a baking sheet with parchment.
- Whisk the Dry Mix together: flour, baking soda, salt, baking powder, vanilla powder, nutmeg, allspice, cinnamon.
- Cream butter with brown + white sugar until light. Beat in egg and vanilla.
- Fold dry into wet until just combined. Stir in oats and raisins. Chill 10 minutes (optional for thicker cookies).
- Scoop 12 mounds (~1½ tbsp each). Bake 10–12 minutes until edges set and centers look slightly soft.
- Cool 5 minutes on the sheet, then move to a rack.
