Oatmeal Raisin Cookie Recipe

🧂 Ingredients

Dry Mix

  • 1 cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp baking powder
  • ½ tbsp vanilla powder
  • ⅛ tsp nutmeg
  • ⅛ tsp allspice
  • ¼ tsp ground cinnamon

Wet Mix

  • 5 tbsp unsalted butter (softened)
  • ½ cup light brown sugar
  • ⅓ cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract

Add-ins

  • ¼ cup quick one-minute oats
  • ¼ cup raisins (or more to taste)

  1. Preheat oven to 350°F / 175°C. Line a baking sheet with parchment.
  2. Whisk the Dry Mix together: flour, baking soda, salt, baking powder, vanilla powder, nutmeg, allspice, cinnamon.
  3. Cream butter with brown + white sugar until light. Beat in egg and vanilla.
  4. Fold dry into wet until just combined. Stir in oats and raisins. Chill 10 minutes (optional for thicker cookies).
  5. Scoop 12 mounds (~1½ tbsp each). Bake 10–12 minutes until edges set and centers look slightly soft.
  6. Cool 5 minutes on the sheet, then move to a rack.
