How To Make a Classic Coney Island Hot Dog Chili Sauce

Ingredients
- 1 medium onion, finely chopped
- 1 clove garlic, minced (or 2 for extra)
- ½ tsp olive oil
- 1 lb ground beef
- 1 tbsp tomato paste
- ¼ tsp cumin
- ½ tsp onion powder
- ¼ tsp thyme
- ½ tsp Mrs. Dash (or all-purpose seasoning)
- ¼ tsp ground mustard
- ⅛ tsp allspice
- ½ tbsp dark chili powder
- ½ tbsp smoked paprika
- Pinch of kosher salt
- ½ cup water
- ½ cup low sodium beef broth
- 1 tbsp chili base (optional, for extra flavor)
- Hot dog buns (poppy seed if you like)
- All-beef hot dogs
- Mustard (yellow, classic)
- Extra chopped onions (for topping)
- Optional “Smokey Coney Dog”: smoked sausage with cheese & jalapeño + shredded triple cheese
Tip: For extra-fine chili texture, splash in an extra 2–3 tbsp of broth and mash gently with a potato masher during simmer.
Instructions (with Timestamps)
- Chop onion & garlic.
- Heat ½ tsp olive oil in a pan. Add onions and cook until soft, then add garlic.
- Add 1 lb ground beef; cook and break it down with onions.
- Stir in 1 tbsp tomato paste.
- Add seasonings: cumin, onion powder, thyme, Mrs. Dash, ground mustard, allspice, dark chili powder, smoked paprika. Mix well.
- Add a pinch or two of kosher salt.
- Pour in ½ cup water + ½ cup beef broth (1 cup total). Stir.
- Simmer until beef is fully cooked and sauce thickens.
- Let chili cook down for ~30 minutes until rich and flavorful.
Build the Coney Dog
- Place an all-beef hot dog on a bun.
- Spoon chili sauce over the hot dog.
- Top with finely chopped onions.
- Add a drizzle of mustard.

- Use a smoked sausage with cheese & jalapeño.
- Spread mustard on the bun first.
- Add chili sauce, onions, and shredded triple cheese.
