Shredded Chicken Tacos Using Corn Tortillas

🧄 Ingredients:
- Chicken & Veggies:
- 2–3 chicken pieces (bone-in or boneless)
- 1 tsp olive oil, garlic, ½ onion, bell pepper, tomato, bay leaf
- Mrs. Dash, black pepper, paprika, garlic powder
- Water (to cover)
- Sauce:
- 1 can enchilada sauce
- 1 can diced tomatoes (lime & cilantro)
- Garlic, fajita seasoning, 1 cup chicken stock
- Taco Assembly:
- 6–8 corn tortillas
- Shredded Mexican cheese blend
- Crumbled feta (optional), sour cream, chopped tomatoes & cilantro
👩🍳 Instructions:
- Cook the Chicken: Sear chicken with garlic & seasonings. Add veggies, bay leaf, and water. Simmer 30–40 mins. Shred and reserve broth.
- Make the Sauce: Simmer enchilada sauce, diced tomatoes, fajita mix, garlic, and broth. Add chicken and simmer 5–10 mins.
- Prep Tortillas: Dip in broth or sauce. Warm in microwave if needed.
- Assemble: Fill with chicken mix, top with cheese & optional feta.
- Finish: Top with sour cream, tomatoes, and cilantro. Serve warm.
