The Best Easy Peach Cobbler Dumplings

Ingredients

  • 1/3 cup melted butter
  • 2–3 cans peaches (with syrup)
  • 1/2 tbsp cinnamon
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • Deep dish pie crust (2-pack)

Instructions

  1. Preheat: Heat oven to 375°F (190°C). Butter a 9×13-inch baking dish.
  2. Make the peach filling: In a saucepan combine peaches with a little syrup, cinnamon, cornstarch, and vanilla. Simmer 3–5 minutes until slightly thickened.
  3. Form dumplings: Unroll pie crusts. Cut into strips or squares. Spoon a peach or two in the center and wrap/roll into dumplings; place seam-side down in the dish.
  4. Butter & bake: Drizzle melted butter over dumplings. Pour remaining peach syrup around (not over the tops to keep them crisp).
  5. Bake: 30–35 minutes until pastry is puffed and deep golden and the sauce is bubbling.
  6. Serve: Rest 5 minutes. Spoon with syrup and enjoy warm (great with vanilla ice cream!).
